Once made, the freshly prepared customized whipped topping stays fresh for weeks under refrigeration. This is possible because once you transfer the whipping gas from the cartridge into the bottle, the oxygen is displaced, thus preserving the food.
A recipe for standard whipped cream is included in the instructions, but you can also get creative with your whipped toppings. Gelatin sheets properly soaked in accordance with their directions can be mixed into hot puree and put in the pressure whipper, so you can make whipped tartar sauce, raspberry mousse, and many other sides.
